For Kurt Michael Friese, chef and owner of Devotay restaurant in downtown Iowa City, buying fresh and buying local is a “no brainer”.  Friese came to appreciate local food through honing his cooking chops and recognizing what food was most pleasing to the palate—that which was freshest.  He says, “The closer it is to my kitchen door, the fresher it’s going to be”.  That’s why Chef Friese gets as much of his restaurant’s supplies from local vendors as possible, buying from 34 producers in the region.  Through his journey utilizing and being inspired by local food, Friese has also had the joy of experiencing what he calls, “the spiritual aspect [of eating locally] that comes with shaking the hand that raised the food”.  
Chef Friese has also taken his adoration for local food from the kitchen and into the bookstore.  His first book, A Cook’s Journey: Slow Food in the Heartland, was released July 30th and is now available in bookstores nationwide.  Friese describes the book as a collection of essays, photos and recipes about the people that are, “walking the walk when it comes to slow food.”  Chef Kurt Michael Friese is also co-founding member of Field to Family, founding leader of Slow Food Iowa and serves on the Slow Food USA National Board of Directors, is editor-in-chief and co-owner of Edible Iowa River Valley magazine and has regular columns in several local, regional and national newspapers and magazines.
